Baked Vegetable Casserole in Clay Pot

Ingredients:

  • 2 zucchinis
  • 1 bell pepper
  • 1 onion
  • 2 tomatoes
  • 200g feta cheese
  • Olive oil
  • Salt and pepper to taste
  • Fresh herbs (like basil or oregano)

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Chop the zucchinis, bell pepper, onion, and tomatoes.
  3. In a clay pot, layer the vegetables, drizzle with olive oil, and sprinkle with salt, pepper, and herbs.
  4. Crumble feta cheese on top, cover with the lid, and bake for 30-40 minutes.
